1 medium carrot , cut into strips
1/2 medium sweet pepper , any colour , cut into strips
1/4 red onion , cut into strips
1/4 cup sherry wine or 1/4 cup dry white wine
vegetable oil cooking spray

Instructions

1.Preheat the oven to 375 degrees F.
2.On one of the fillets, season with salt, dill, and pepper. Spread the carrots, red pepper, and onion strips over the fillet, leaving a 1/2-inch border around the edge. Top with the remaining fish fillet.
3.Carefully transfer the fish to a baking dish sprayed with vegetable oil cooking spray. Sprinkle with sherry and additional dried dill, if desired. Cover the dish with foil.
4.Bake in the preheated oven for 25-30 minutes, or until the fish flakes easily with a fork.
