1/2 lb chickpeas , soaked overnight and cooked until tender ( or 1 lb can , drained )
1 large onion , chopped ( approx 1 cup )
1 cup long-grain rice
3 cups water
1 pinch saffron
3/4 cup olive oil
1/2 cup tomato puree
1/2 lemon , juice of
salt and pepper

Instructions

1.In a large pot, sauté the chopped onion in olive oil until translucent.
2.Add the chickpeas, tomato puree, water, saffron, salt, and pepper, and bring to a boil. Reduce the heat and simmer for 20 minutes.
3.Rinse the rice and add it to the pot, stirring to combine. Simmer for an additional 20 minutes or until the rice is tender and the liquid has been absorbed.
4.Remove from heat, add the lemon juice, and let rest for 10-15 minutes before serving.
