salt water ( use 3 tablespoons salt for each quart of water )
2 lbs sugar
3 cups distilled white vinegar
6 cinnamon sticks
2 tablespoons whole allspice
2 tablespoons whole cloves
2 tablespoons mustard seeds

Instructions

1.Peel the outer green skin off the watermelon rind.

7.Add the watermelon rind to the saucepan and bring it to a boil.

9.Discard the cinnamon sticks, allspice and cloves before serving.
10.Store the pickle in an airtight jar and refrigerate up to 3 months.
