2 1/4 cups all-purpose flour
1 1/4 cups white sugar
1 pinch salt
2 teaspoons baking powder

3 egg , beaten
1 tablespoon vegetable oil
1/4 teaspoon almond extract
Biscotti is an Italian cookie that originated in the city of Prato. Biscotto, the singular form of biscotti, means twice-baked in Italian. Biscotti are oblong-shaped cookies that are baked twice to make them crispy and crunchy. Instructions

1.In a large bowl, combine flour, sugar, salt and baking powder.
2.Mix in sliced almonds and orange zest.
3.Make a well in the center and add in beaten eggs, vegetable oil and almond extract.
4.Mix until dough is formed.
5.Divide dough into 2 equal portions and shape each portion into a log.
6.Preheat oven to 350°F (175°C).
7.Place logs onto a baking sheet lined with parchment paper and bake for 25 minutes.
8.Remove from the oven, and let cool slightly.
9.Slice the logs diagonally into biscotti and arrange the slices onto the same baking sheet.
10.Bake for an additional 10-15 minutes or until the edges are golden brown. Let cool completely before serving.
