vinegar ( find one that 's over 6 % acid , if possible )
water
4 cups red wine vinegar
4 cups water
4 1/2 lbs sugar
1/3 lb fresh ginger , sliced into 1/8-inch coins
20 cinnamon sticks , each about 3-inch long

Instructions

1.In a large pot, combine the cubed pumpkin, vinegar, and water. Bring to a boil, then reduce the heat and simmer until the pumpkin is tender, about 10 minutes.
2.Drain the pumpkin and set aside.
3.In a separate pot, combine the red wine vinegar, water, sugar, ginger, and cinnamon sticks. Bring to a boil, then reduce the heat and simmer for 10 minutes.
4.Add the cooked pumpkin to the pot and simmer for an additional 10 minutes.
5.Remove from heat and let cool to room temperature.
6.Once cooled, transfer the pumpkin and liquid to jars and refrigerate for at least 24 hours before serving.
