Ingredients

6 lemons ( or a mixture of 3 of each ) or 6 limes ( or a mixture of 3 of each )
1 ounce salt
1 tablespoon paprika
2 tablespoons caster sugar
5 tablespoons sunflower oil
1/2 pint white distilled pickling malt vinegar

Instructions

1.Cut the lemons and limes lengthways in quarters, then again in half and remove any pips.
2.Place the citrus fruit in a large sterilized jar.
3.Mix the salt, paprika, caster sugar and sunflower oil together in a bowl, then spoon over the fruit.
4.Pour enough vinegar into the jar to cover the fruit completely.
5.Leave to marinate in a cool place for at least 1 week before use.
