Instructions

1.In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add in the egg, vanilla, and almond/hazelnut extract, and continue to mix.
2.In a separate bowl, sift together the flour, baking powder, and salt. Slowly mix the dry ingredients into the wet mixture until a dough forms.
3.Divide the dough into three equal parts. Add red food coloring to one part, cocoa powder to another, and leave the third plain.
4.Roll each dough into a log shape, wrap in plastic wrap and refrigerate until firm.
5.Preheat the oven to 375°F. Slice each log into 1/4 inch thick rounds and place onto a baking sheet lined with parchment paper.
6.Sprinkle chopped walnuts/pistachios on top of each cookie. Bake for 12-15 minutes.
7.Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
