2 cups flour
1/4 teaspoon salt
3/4 cup butter or 3/4 cup margarine , softened
1/2 cup sugar
2 egg yolks
1 teaspoon vanilla
2 egg whites
1/4 teaspoon cream of tartar
1 cup powdered sugar , sifted
1 cup almonds , ground
Known as Napoleon's Hat for its shape, these cookies are a family classic that can be served on any occasion. The delicate pastry shell is filled with raspberry jam and topped with ground almonds, making them perfect with a cup of tea or coffee for breakfast or as a mid-afternoon snack. Instructions

1.Mix flour and salt in a medium bowl. Set aside.
2.Beat butter and sugar with an electric mixer until light and fluffy.
3.Stir in egg yolks and vanilla.
4.Gradually add flour mixture until well combined.
5.Beat egg whites and cream of tartar until stiff peaks form.
6.Fold in powdered sugar and ground almonds to the egg whites.
7.Form little cookie cups (about 1 tablespoon of batter each) on a lightly-greased baking sheet.
8.Use your thumbs to create a well in each cookie cup to resemble a Napoleon's hat.
9.Fill each cookie cup with about 1/2 teaspoon jam.
10.Bake in a preheated oven at 350 degrees Fahrenheit for 15 minutes or until golden brown.
