1/2 cup icing sugar
1 cup all-purpose flour
3/4 cup butter , softened
lemon zest ( optional ) or orange zest ( optional )

Instructions

1.Preheat oven to 300°F (150°C).
2.Cream the softened butter until pale in colour. Sift in the icing sugar, composting any lumps.
3.Add corn starch, sifted flour and flavoring and mix well to beat together.
4.Turn onto floured board.
5.Knead lightly until it comes together into a ball.
6.Pat out to shape. Cut into rounds or fingers.
