16 cucumbers ( peeled , seeded and chopped )
1/4 cup canning salt
1 quart onion , chopped
2 red peppers , chopped
2 green peppers , chopped
1 pint vinegar
4 cups sugar
1/2 cup flour or 1/2 cup therma-gel cornstarch
1 tablespoon dry mustard
1 tablespoon turmeric
1 teaspoon mustard seeds
1/2 teaspoon celery seed

Instructions

1.In a large bowl, combine the peeled, seeded and chopped cucumbers with canning salt and allow to stand for 3 hours.
2.Rinse cucumbers and drain the water.
3.In a large pot, combine chopped onion, red peppers, green peppers, vinegar, sugar, flour, mustard, turmeric, mustard seeds and celery seeds. Cook on medium-low heat for 15 minutes.
4.Add the cucumbers to the pot and stir well until everything is combined.
5.Bring the mixture to a boil and simmer for 30 minutes.
6.Ladle the mixture into sterilized jars and let cool.
7.Refrigerate the jars for at least a week before enjoying.
