Ingredients

7 ounces almond paste
3/4 cup sugar
1/2 teaspoon almond extract
3/4 cup margarine or 3/4 cup butter , room temp
3 eggs
1 cup all-purpose flour , Sifted
1/4 teaspoon salt
15 drops green food coloring
15 drops red food coloring
2/3 cup apricot preserves ( pressed into a coarse sieve to remove any large pieces of fruit )
3 ounces semisweet chocolate
1 teaspoon vegetable shortening ( butter flavored Crisco preferably )
Italian Tri-Color Cookies are a classic Italian dessert that has been enjoyed for generations. Also called Rainbow Cookies, these delicacies are made up of three layers of vibrant colors that are sandwiched together with apricot preserves. Each layer is almond-flavored and has a moist texture, which pairs well with the fruity and chocolatey flavors of the filling and topping. These cookies are commonly served during Christmas and other festive occasions as they are visually appealing and delicious.

Instructions

1.Preheat oven to 350°F. Grease 3 (13x9-inch) baking pans; line bottoms with waxed paper. Grease paper; set pans aside.
2.Beat almond paste, sugar, and almond extract in a large bowl with an electric mixer at medium speed until well blended. Add margarine, beating until light and fluffy. Add eggs 1 at a time, beating well after each addition. Stir in flour and salt. Divide batter among 3 bowls. Stir green food coloring into 1 bowl, and red food coloring into another. Leave remaining bowl plain.
3.Spread plain dough into 1 prepared pan. Spread green dough into second prepared pan, and red dough into third prepared pan. Bake for 10 to 12 minutes or until edges are lightly browned. Invert onto wire racks. Remove waxed paper. Cool completely.
4.Spread apricot preserves on top of the plain cookie layer. Top with green cookie layer, then with red cookie layer, pressing gently after each addition. Cover with plastic wrap. Weight with heavy baking sheet or cutting board. Refrigerate overnight.
5.Melt chocolate and shortening in a small saucepan over low heat, stirring until smooth. Trim edges of cookie layers. Cut into 1-inch squares or diamonds. Drizzle or spread chocolate over cookies. Let stand until set. Store in an airtight container for up to 1 week.
