2 cups whole almonds

8 Medjool dates , pitted and chopped
4 1/2 cups unbleached all-purpose flour
1 tablespoon ground cinnamon

1/2 teaspoon ground cardamom

2 eggs
1 cup brown sugar
1 cup honey
1/4 cup blackstrap molasses
1 tablespoon water
2 teaspoons almond extract
2 teaspoons grated orange zest
1 teaspoon grated lemon zest
3/4 cup confectioners ' sugar
2 tablespoons whole milk
1 teaspoon lemon zest

Instructions

1.Preheat oven to 350 degrees F (175 degrees C) .

7.Gradually mix in the flour mixture into egg mixture to make soft dough.
8.Divide the dough into 6 equal portions, and roll them into 1/2 inch thick slabs.
9.Line a baking sheet with parchment paper and arrange the slabs on it.
10.Bake at 350 degrees F (175 degrees C) for 12–15 minutes.
11.Cool completely on a wire rack.
12.Mix together confectioners' sugar, milk, and lemon zest to make glaze.
13.Brush the glaze onto cookies and let them dry completely for a few hours.
14.Store the cookies in an airtight container between layers of waxed paper or parchment paper.
