Ingredients

1/2 cup sifted cake flour
3/4 teaspoon baking powder

3 large eggs , separated
1/2 teaspoon almond extract
1/4 teaspoon vanilla extract
6 tablespoons sugar

Instructions

1.Preheat oven to 350°F.
2.In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
3.In a large mixing bowl, beat together the egg yolks, almond extract, vanilla extract, and 3 tablespoons of sugar until pale yellow and thick, about 3 minutes.
4.In a separate mixing bowl and using clean beaters, beat the egg whites until they form a soft peak. Gradually add the remaining 3 tablespoons of sugar and beat until stiff peaks form.
5.Gently fold the flour mixture into the egg yolk mixture, then fold in the egg white mixture until just combined.
6.Drop tablespoon-sized portions of the batter 2 inches apart onto a parchment-lined cookie sheet.
7.Bake for about 10 minutes or until lightly golden. Let the cookies cool on the baking sheet for a few minutes before transferring them onto a wire rack to cool completely.
