Ingredients

1 lb phyllo dough ( I use the Athens brand )
1 cup butter , but use the spray oil if you choose
5 5 cups ground pistachios ( or a combination ) or 5 cups almonds ( or a combination )
1 cup sugar
1 teaspoon cinnamon
raw sugar , to sprinkle on cookie tops ( turbinado )
1 1/2 cups honey
1 1/2 cups sugar
1 cup water
1 teaspoon of grated lemon rind

Instructions

1.Preheat the oven to 350°F.
2.In a large saucepan, combine the honey, sugar, water, and grated lemon rind, and bring to a gentle boil. Reduce heat and let simmer for 5-7 minutes, then remove from heat.
3.In a large bowl, mix together the ground pistachios, sugar, and cinnamon.
4.Melt the butter in a small saucepan and set aside.
5.Unwrap the phyllo dough and cut the stack into three evenly sized sections.
6.Place one layer of phyllo dough on a baking sheet and brush with melted butter. Sprinkle a layer of the pistachio mixture on top of the phyllo dough and press down gently.
7.Repeat step six until all the phyllo dough and pistachio mixture are used.
8.Top the final layer with any remaining melted butter and sprinkle with raw sugar.
9.Bake in the preheated oven for 25-30 minutes, or until golden brown.
10.Remove from oven and let cool.
