Ingredients

8 ounces dried figs ( I used a combination of Black Mission and Calimyrna )
1 tablespoon honey ( I like Manuka )
1/4 cup water
1 pinch nutmeg
1 pinch cardamom
1 pinch cinnamon
2 ounces flour
3 ounces spelt flour
1/2 teaspoon cinnamon
1 pinch baking soda
1 pinch salt
1 ounce salted butter , room temperature
2 ounces non-hydrogenated shortening
1 ounce brown sugar
2 egg whites
1/2 tablespoon vanilla extract
1/2 teaspoon orange extract
Egyptian Fig Roll Cookies are a sweet and spiced cookie made with dried figs and honey filling, wrapped in a crispy outside layer made with spelt flour. These cookies are a traditional dessert in Egyptian cuisine and are often enjoyed during special occasions. Instructions

1.Preheat the oven to 350°F. Line a baking sheet with parchment paper.
2.In a saucepan, combine the dried figs, honey, water, nutmeg, cardamom, and cinnamon. Cook over medium heat for 5-7 minutes, stirring frequently until the figs have softened and the mixture has thickened. Remove from heat and let cool.
3.In a mixing bowl, whisk together the flour, spelt flour, cinnamon, baking soda, and salt until well combined.
4.In a separate bowl, cream the butter, shortening, and brown sugar together until light and fluffy. Add the egg whites, vanilla extract, and orange extract. Mix well.
5.Gradually add the dry ingredients to the butter mixture, mixing until just combined and a dough is formed.
6.Roll the dough to approximately 1/4 inch thickness on a lightly floured surface. Cut the dough into rectangles, approximately 3 inches by 2 inches.
7.Place a small amount of the fig filling on one half of each rectangle. Fold the other half of the rectangle over the filling and press the edges together to seal.
8.Bake the cookies for 12-15 minutes, or until lightly golden brown. Let cool before serving.
