Instructions

1.Preheat your oven to 375 degrees Fahrenheit. Line baking sheets with parchment paper.
2.Combine chia and warm water, set aside for 5 minutes to thicken.
3.In a large mixing bowl, whisk together flour, cornstarch, baking soda, baking powder, nutmeg, salt, and chia mixture.
4.Beat the shortening, butter, and both sugars until creamy. Add golden syrup and vanilla. Mix until combined.
5.Add the dry mixture to the wet mixture, mix well. Fold in oats and chocolate rocks to the dough.
6.Roll the dough into 1 1/2" balls and place them on the baking sheets.
7.Bake for 10-15 minutes or until golden brown and crispy.
