Ingredients

2 ounces unsweetened chocolate , melted
2 1/4 cups flour
1/4 teaspoon salt
1 cup butter , softened
3/4 cup sugar
1 egg
1 teaspoon vanilla extract
2 teaspoons cocoa powder , heaped
1 teaspoon instant coffee granules , mixed in
1 teaspoon boiling water

Instructions

1.Preheat oven to 375°F (190°C).
2.In a small bowl mix together the instant coffee granules and boiling water until fully dissolved. Set aside.
3.In a medium-sized mixing bowl, whisk together the flour and salt.
4.In a large mixing bowl, cream together the butter and sugar.
5.Beat in the egg and vanilla extract.
6.Mix in the cocoa powder.
7.Add the coffee mixture and melted chocolate. Mix until fully combined and smooth.
8.Add the dry ingredients into the wet ingredients in three parts, mixing until a smooth dough is formed
9.Fill a cookie press with the cookie dough and press onto ungreased cookie sheets, making 1-inch (2.5 cm) cookies, spacing them about an inch apart.
10.Bake for 6-8 minutes until lightly browned

PROS

These cookies are super tasty due to the combination of chocolate and mocha flavors.
It’s a nice twist on the usual butter cookie.

CONS

The dough is a bit hard to work with and requires a cookie press to make, it’s not the easiest cookie recipe out there.
