Ingredients

1 1/2 cups flour

1/2 cup white sugar
1 1/2 cups rolled oats
1/2 cup flaked coconut
3/4 cup vegetable oil ( can not be substituted with olive oil )
2 eggs , lightly beaten
1 1/2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg ( optional )
1 cup raisins
1/8 cup white rum ( may subsititute with spiced rum , but then omit nutmeg )

Instructions

7.Drop small spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
8.Bake for 12-15 minutes or until the edges are golden brown.
9.Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
