Ingredients

4 1/2 lbs pickling cucumbers or 4 1/2 lbs English cucumbers
1 onion , sliced
fresh dill weed , sprigs
2 cups white wine vinegar
2 cups water
2 1/2 cups sugar
1 tablespoon yellow mustard seeds
6 juniper berries
1/2 teaspoon whole coriander seed
1/2 teaspoon whole black peppercorn
1/4 teaspoon whole caraway seed
1/4 teaspoon dill seed
1/2 teaspoon whole allspice
1 crumbled bay leaf
4 whole cloves
1/8 teaspoon powdered ginger
2 tablespoons salt
Homemade German Mustard Pickles (Senfgurken) Recipe is a traditional German recipe that is usually served as a side dish with sausages and bread. The pickles are tangy, sweet and savory all in one bite, packed with spices and intense flavor. This recipe dates back to the medieval times when it was introduced to the Germans by the French. Germans then made their own version, adding their own twist to the recipe. Pickled cucumbers are also known as Senfgurken which means `mustard cucumbers' because of the addition of yellow mustard seeds in the recipe. Instructions

1.Wash the cucumbers and cut off the ends. Cut into rounds or spears.
2.In a large pot, combine the vinegar, water, sugar, mustard seeds, juniper berries, coriander seed, black peppercorn, caraway seed, dill seed, allspice, bay leaf, cloves, ginger and salt.
3.Bring the mixture to a boil, stirring occasionally until the sugar has dissolved.
4.Place the onions and dill sprigs at the bottom of each jar. Then add the cucumber slices until the jar is full.
5.Pour the hot liquid over the cucumbers to cover them completely. Add more dill sprigs, if desired.
6.Close the jars and let cool to room temperature.
7.Refrigerate for at least 2 days before serving. The flavors will continue to develop over time.
