Ingredients

1/2 cup unsalted butter

2 packages instant pistachio pudding mix

The recipe is a combination of sugar cookie dough and instant pistachio pudding mix added to it to give it that one-of-a-kind taste. The salt is added for balance and the chopped pistachio nuts add a lovely crunch. These cookies are perfect for any social event or occasion.

Instructions

1.Preheat your oven to 350 degrees F.
2.Beat the unsalted butter and the sugar together until light and fluffy.
3.Add the vegetable oil, water, and large egg. Beat well.
4.Add the instant pistachio pudding mix, vanilla extract, salt, and baking powder. Beat well.
5.Add the unbleached all-purpose flour and continue beating the mixture until well combined.
6.Add the chopped pistachio nuts and mix until evenly distributed throughout the dough.
7.Shape the dough into small rounded balls.
8.Roll the balls in granulated sugar until evenly coated.
9.Place the balls on a baking sheet and press them down slightly.
10.Bake for 10-12 minutes or until the edges are starting to brown.
11.Let the cookies cool for a minute on the baking sheet before transferring them to a wire rack to finish cooling.
