2 1/4 cups ground blanched almonds ( may be called almond meal at the store )
2 teaspoons vanilla flavoring
3 1/4 cups sifted all-purpose flour
fruit jam ( flavor of your choice , but make sure there are no fruit chunks in it )
confectioners ' sugar
white of 1 egg

Instructions

1.Preheat the oven to 325°F (160°C).
2.In a large bowl, beat together the butter and sugar until light and fluffy.

4.Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for 30 minutes to 1 hour.

6.Cut out cookies using a cookie cutter of your choice. Cut out the centers of half of the cookies.
7.Place all the cookies on a baking sheet lined with parchment paper. Brush the egg white over the whole cookies.
8.Spoon a small amount of fruit jam onto the center of each whole cookie.
9.Top each with a cookie with a cut-out center. Press gently.
10.Bake for 15 minutes or until the edges are slightly golden.
