2 1/2 large lemons
1/2 lb unsalted butter
1/4 teaspoon vanilla extract

3 cups semolina

Instructions

1.In a mixing bowl, grate the zest of 2 lemons and cream it with the softened unsalted butter using an electric mixer. Add vanilla extract, granulated sugar and 1/2 teaspoon salt, mix again.
2.Incorporate the egg, beat to combine.
3.In a separate bowl, mix the semolina, flour and remaining salt. Gradually stir the dry mixture into the liquid ingredients.
4.Mix until the dough comes together. Wrap in plastic and refrigerate for 30 minutes.
5.Preheat oven to 350°F. Line two baking sheets with parchment paper.
6.Roll the dough into 1 1/2 inch balls and roll them into the remaining granulated sugar. Place on the baking sheet and use your thumb to make a small indentation in the center of each cookie.
7.Bake for 20-25 minutes, or until golden brown on the bottom. Let cool before serving.
