125 g butter
1/2 cup brown sugar , firmly packed
1/2 cup caster sugar
1/2 cup desiccated coconut
3 cups corn flakes or 3 cups gluten-free corn flakes , lightly crushed
1 egg , lightly beaten
1/2 cup finely chopped mixed nuts

Instructions

1.Preheat oven to 180°C
2.Cream butter and sugars together in a bowl until combined
3.Beat in egg
4.Stir in flour, desiccated coconut. Mix well.
5.Fold in nuts and cornflakes
6.Drop tablespoons of mixture onto baking trays lined with baking paper
7.Flatten mixture slightly with fork
8.Bake in preheated oven for 12 minutes or until light golden. Serve.
