Instructions

1.Preheat the oven to 350°F.
2.In a large bowl, mix together the buckwheat flour, tapioca flour, brown rice flour, white rice flour, xanthan gum, and celtic sea salt.
3.In a separate bowl, mix the rapadura sugar, 9 ounces of organic butter, and pure rose water until well combined.
4.Add the dry ingredients to the butter mixture and stir to combine.
5.Slowly add the water and knead the dough until it comes together.
6.Roll out the dough and cut into circles using a cookie cutter.
7.In a small saucepan, melt 2 tablespoons of organic butter over medium heat and add the pitted dates. Cook for 5 minutes, stirring occasionally.
8.Top half of the cookie circles with a spoonful of the date mixture.
9.Place another circle on top and press the edges to seal the cookies.
10.Bake for 15-17 minutes or until golden brown.
