2/3 cup matzo cake meal

1/2 cup unsalted butter , melted and cooled slightly

1/4 teaspoon almond extract
2 tablespoons fruit jam , such as raspberry , strawberry , or apricot

Instructions

1.Preheat oven to 350°F (175°C)
2.Line a baking sheet with parchment paper.

5.In another bowl, stir melted butter, egg, vanilla, and almond extract until smooth. Stir into the almond mixture to form a soft dough.
6.Put remaining 1/3 cup sugar in a shallow bowl. Form balls of dough, then roll in sugar to coat and place on a baking sheet about 1 inch apart. (You should have about 24 balls.)
7.Press your thumb deeply into the center of each dough ball to make a well. Spoon a small amount of jam into each well.
8.Bake until golden and slightly firm to the touch, 15 to 18 minutes. Transfer cookies to a wire rack to cool completely.
