Ingredients

1 lb flour
8 ounces butter
1/2 lb sesame seeds , plus additional toasted seeds for sprinkling
1/2 teaspoon dry yeast , dissolved in
2 tablespoons water
1 teaspoon turmeric
1 teaspoon ground cinnamon
1 cup vegetable oil
vegetable oil ( for frying )
25 ounces honey
My Halwa Shebakia -- Special Ramadan Sesame Cookies are a traditional Moroccan cookie enjoyed during the holy month of Ramadan. These deliciously sweet and fragrant cookies are made with a blend of flour, sesame seeds, honey, and spices such as turmeric and cinnamon. The cookies are deep fried and then dipped in hot honey syrup and sprinkled with toasted sesame seeds. These cookies are a wonderful addition to any festive occasion, as they are not only delicious but also visually stunning. Traditionally, they are served as part of the iftar meal to break the day's fast during Ramadan.

Instructions

1.In a large mixing bowl, combine the flour, turmeric and cinnamon.
2.Grind the sesame seeds and add to the flour mixture.
3.Mix well and add in the yeast mixture.
4.Add in the melted butter and mix to form a dough.
5.Let the dough rest for 30 minutes.
6.Divide the dough into small balls.
7.Roll out each ball into a thin sheet and cut into diamond shapes.
8.Heat the vegetable oil in a deep frying pan and fry the cookies until golden brown.
9.Remove with a slotted spoon and place on a paper towel to drain excess oil.
10.Heat the honey in a saucepan until hot.
11.Dip the cookies into the hot honey to coat fully.
12.Sprinkle toasted sesame seeds on top of the cookies.
