2 eggs
2 egg yolks

3 pounds Italian prune plums

Instructions

1.In a large mixing bowl, combine the flour, 1 1/3 cups of sugar, lemon zest, and cinnamon.
2.Add in the butter and use a pastry cutter or your hands to blend it with the flour mixture until crumbly.
3.Add in the eggs and egg yolks and mix until the dough comes together. Add 1 teaspoon of water if needed to help the dough come together.
4.Wrap the dough in plastic wrap and chill for at least 30 minutes.
5.Preheat the oven to 375°F (190°C).
6.Roll out the chilled dough onto a lightly floured surface and transfer it to a greased 9x13-inch baking dish.
7.Press the dough into the dish and trim off any excess.
8.Arrange the plum halves on top of the dough in overlapping rows.
9.Sprinkle the remaining tablespoon of sugar on top of the plums.
10.Bake for 45-50 minutes or until the crust is golden brown and the plums are tender.
11.Serve warm with whipped cream if desired.
