Ingredients

16 cups chicken broth ( made from 10 lbs . chicken legs )
1 head celery , diced
4 garlic cloves , minced
2 tablespoons olive oil
1 lb Italian sausage , crumbled
5 potatoes , cubed ( or cooked pasta if you prefer )
5 carrots
1 lb mushroom
2 bags spinach leaves
1 -2 tablespoon salt , to taste ( about 2 Tbsp but add slowly and taste )
pepper , to taste
1 cup parmigiano-reggiano cheese , freshly shredded ( You may use asiago as well but do not use cheese from a shaker . )

Instructions

1.In a large pot, bring the chicken broth to a boil.
2.Add the diced celery and minced garlic, and let it simmer for 10-15 minutes.

4.Add the crumbled Italian sausage to the pan, and cook until browned and cooked through.
5.Add the cooked sausage, cubed potatoes, chopped carrots, and sliced mushrooms to the pot of broth.
6.Let it simmer until the potatoes and carrots are tender and cooked through, about 20-25 minutes.
7.Add the spinach leaves to the pot and let them wilt, about 2-3 minutes.
8.Season to taste with salt and pepper.
9.Serve hot with freshly shredded parmigiano-reggiano or asiago cheese on top.
