4 cups low sodium vegetable broth or 4 cups low sodium chicken broth
3 eggs
3/4 cup grated romano cheese
1/4 cup parsley , minced
6 ounces mozzarella cheese , in 1/2 inch dice
black pepper

Instructions

1.Preheat oven to 350 degrees F
2.Cut bread into 1inch slices and place on baking sheet. Brush both sides with olive oil and bake for 8-10 minutes or until lightly golden. Rub both sides of bread with garlic halves.
3.In a large saucepan or pot, bring broth to a simmer.
4.In a medium bowl, whisk together eggs and romano cheese until well combined.
5.Slowly pour the egg mixture into the simmering broth, stirring constantly until the eggs are cooked and the mixture is thickened (about 3-4 minutes).
6.Stir in diced mozzarella cheese and minced parsley and continue stirring until cheese is melted.
7.Ladle soup into bowls and top each bowl with croutons and freshly cracked black pepper.
