Ingredients

16 ounces wild mushrooms ( preferred ) or 16 ounces white button mushrooms
2 medium onions , chopped
2 tablespoons butter
1/2 lemon , juice of
1/4 cup water
6 6 cups beef stock or 6 cups beef bouillon , divided
1 cup sour cream
3 tablespoons flour
salt and pepper
fresh dill ( to garnish )

Instructions

1.Clean and cut the mushrooms into bite-sized pieces.

4.Add the lemon juice and water, then cover and let simmer for 20 minutes.
5.In a small bowl, mix together the flour and sour cream until well combined.

7.Add 4 cups of beef stock and bring the soup to a boil.
8.Reduce the heat and let the soup simmer for 10-15 minutes.
9.If the soup is too thick, add more beef stock as needed.
10.Season with salt and pepper to taste.
11.Serve hot with fresh dill garnish on top.
