Ingredients

2 1/2 quarts water
2 1/2 lbs pork spareribs
2 medium carrots , sliced
2 stalks celery , diced
2 bay leaves
10 peppercorns
1/2 teaspoon salt
3 medium potatoes , peeled , quartered and sliced
2 tablespoons butter or 2 tablespoons margarine
4 medium dill pickles , peeled and grated
1 tablespoon all-purpose flour
1/2 cup sour cream
pickle juice ( optional )

Instructions

1.In a large pot, bring water, pork spareribs, carrots, celery, bay leaves, peppercorns, and salt to a boil. Skim off any foam that rises to the surface.
2.Reduce heat and simmer for 60 minutes.
3.Remove spareribs and set aside. Remove bay leaves.
4.Add potatoes and simmer for 20 minutes,
5.In a separate pan, melt butter and add grated pickles. Cook for 2-3 minutes.
6.Add flour to the pickle mixture and stir well. Add a ladleful of soup broth to the pickle mixture and stir until smooth.
7.Stir the pickle mixture back into the pot and simmer for another 10 minutes.
8.Remove from heat and stir in the sour cream and pickle juice (if using). Serve hot.
