Ingredients

Instructions

1.Preheat oven to 350 degrees F (175 degrees C).
2.Separate egg yolks and whites. In a large mixing bowl, beat egg whites with an electric mixer until they become stiff, then set aside.
3.In a separate bowl, beat egg yolks, sugar and water until pale yellow and creamy.
4.Sift together flour and cornstarch over the egg yolk mixture then fold in gently.
5.Fold in the beaten egg whites.
6.Grease a springform pan and pour the cake batter in. Bake for 40-45 minutes.
7.Melt butter in a pan and sprinkle caster sugar over it. Add kirsch and flambé, let it evaporate.
8.Let the cake cool down, then slice it in two layers.
9.Pour kirsch mixture over each layer before adding them back together.
10.Let it rest overnight before serving.
