Ingredients

2 1/2 cups double cream , stiffly beaten
1/4 cup confectioners ' sugar
2 tablespoons confectioners ' sugar , for dusting
1/2 cup hazelnuts , toasted
2 cups fresh cherries , halved and stoned
4 ounces semisweet dark chocolate squares , chopped or grated
1/4 cup brandy
1/4 cup orange-flavored liqueur
2 chocolate sponge cake , halved horizontally
2 tablespoons cocoa powder , for dusting
Zuccotto is an Italian dessert that originated in Florence. This cake is made by layering chocolate sponge cake with a cream mixture of whipped cream, sugar, hazelnuts, cherries, and alcohol. Instructions

1.Take a large mixing bowl and combine the double cream and the confectioners' sugar together.
2.Add the brandy and orange-flavored liqueur to the bowl and mix well.
3.Keep half of the toasted hazelnuts aside, and put the remaining in a Ziploc bag. Crush them using a rolling pin until finely chopped.
4.Add the chopped cherries and the finely chopped hazelnuts to the cream mixture and fold gently until well combined.
5.Use a cake pan or a bowl to line with cling film. Keep one layer of the sliced chocolate sponge cake in the bottom, and then layer the remaining all around the sides.
6.Pour the cherry mixture into the mold and make sure to fill every small gap and corner. Tap the mold gently to release the air bubbles.
7.Cover the cream with a final layer of sponge cake and press gently. Cover and chill the mold for at least 6 hours, or overnight.
8.Remove the cling film and place the Zuccotto on a plate or serving dish. Decorate the Zuccotto by dusting cocoa powder and confectioners' sugar on top and sides of the cake. Sprinkle remaining chopped hazelnut over it. Serve cold.
