Ingredients

1/2 cup fresh flat-leaf parsley , chopped
2 tablespoons pesto sauce
2 eggs , beaten
1 cup grated gruyere cheese or 1 cup swiss cheese , plus a little extra for topping
1 package crescent roll dough ( or use your favorite shortcrust pastry recipe , see note )

Instructions

1.Preheat your oven to 400 degrees F.
2.In a large skillet, sauté the onion in olive oil until translucent, then add the garlic and stir for an additional minute.
3.Add the sliced zucchini, herbes de provence, salt, and pepper to the onion and garlic mixture. Cook over medium heat for about 10 minutes or until the zucchini is tender and lightly caramelized.

5.In a separate bowl, whisk together the eggs and grated Gruyere cheese. Add this mixture to the zucchini filling and stir until fully incorporated.
