2 tablespoons cumin
4 cups white vinegar
2 cups brown sugar
2 tablespoons red pepper flakes
2 teaspoons ground black pepper
6 -8 cups chopped ripe tomatoes
24 ounces tomato paste

Instructions

1.In a large bowl, combine chopped zucchini, onions, bell peppers, jalapeno peppers, banana peppers, minced garlic, and pickling salt.
2.Stir well and let it sit for at least 3 hours.
3.Drain out the excess water and transfer the vegetable mixture to a large pot.
4.Add in dry mustard, garlic powder, cumin, white vinegar, brown sugar, red pepper flakes, black pepper, chopped tomatoes, and tomato paste.
5.Bring the mixture to a boil over medium heat and simmer for 30 minutes, stirring occasionally.
6.Remove the pot from heat and ladle the salsa into sterilized jars.
7.Use a canner or a large pot to process the jars in boiling water for 15 minutes.
8.Let the jars cool and store in a cool, dark place.
