Ingredients

4 cups shredded zucchini or 5 small zucchini
1/2 teaspoon salt
2 eggs
2 tablespoons parmesan cheese
2 ounces cheese ( I used mozzarella and cheddar )
1 teaspoon italian seasoning
1 lb ground beef
2 ounces pepperoni , chopped
1 medium onion , chopped
2 cups spaghetti sauce
1 medium bell pepper , chopped
4 ounces cheddar cheese ( or a mix of both ) or 4 ounces mozzarella cheese ( or a mix of both )

Instructions

1.Pre-heat oven to 375F.
2.Sprinkle salt over zucchini and set aside.

9.Add remaining meat mixture on top of the bell pepper.
10.Layer the egg and cheese mixture over the meat mixture.
11.Finally, top it off with a layer of black olives.
12.Bake the casserole in the oven for 25 minutes and add shredded cheese mixture of Mozzarella and Cheddar on top and bake for a further 10 minutes until the cheese melts and bubbles.
13.Allow the casserole to cool for about 5-10 minutes before serving.
