2 1/2 cups coarsely grated zucchini ( from about 3 medium )
1 teaspoon salt , divided
1 large egg
1 large egg yolk
1/2 cup all-purpose flour ( or more )
1/2 cup crumbled feta cheese
1 cup chopped fresh Italian parsley
1/2 cup chopped green onion
1 1/2 tablespoons chopped fresh dill
1/2 cup about olive oil
1/2 cup about corn oil

Instructions

4.Heat up the olive oil and corn oil in a skillet over medium heat.
5.Using a heaping tablespoon, scoop the mixture into the skillet and flatten them into patties.
6.Fry the patties until golden brown on each side, about 2-3 minutes per side.
7.Transfer to a paper towel-lined plate to drain the excess oil before serving.
