They are made with grated zucchini, eggs, crumbled feta cheese, and fresh mint, and are seasoned with salt and pepper. These gluten-free pancakes are perfect for those looking to cut back on carbs and increase their vegetable intake. They are crispy on the outside and soft on the inside and can be enjoyed on their own or served with a dollop of yogurt or sour cream for added flavor.

Instructions

1.Place grated zucchini in a colander and sprinkle with salt. Toss to combine and let sit for 30 minutes to release excess water.
2.In a medium bowl, beat eggs. Add crumbled feta cheese, minced mint leaves, flour and pepper, and stir until well combined.
3.Using your hands, squeeze the grated zucchini to remove excess water. Pat dry with a paper towel and add to the egg mixture. Mix until well combined.
4.Heat a large nonstick skillet over medium heat. Add a small amount of butter or spray with butter-flavored cooking spray.
5.Using a spoon or cookie scoop, drop the zucchini mixture into the skillet. Flatten with a spatula to form a pancake shape.
6.Cook until golden brown and crisp, about 3-4 minutes per side. Repeat until all of the batter is used, adding more butter or cooking spray as necessary. Serve warm.
