Instructions

1.Preheat the oven to 375 degrees F (190 degrees C).
2.Cut the zucchini lengthwise into slices about 1/8-inch thick.
3.Brush both sides of each zucchini slice with olive oil and place on a baking sheet lined with parchment paper. Bake for about 10-12 minutes or until tender. Set aside.
4.In a large skillet, melt the light butter over medium-high heat. Add the diced tomatoes and garlic and cook for 5 minutes, stirring occasionally. Stir in the lentils, dried basil, and pepper, and simmer for an additional 5 minutes. Set aside.
5.Grease a 9x13 inch baking dish with light butter. Arrange three slices of bread on the bottom of the dish, trimming to fit as necessary. Add half of the lentil-tomato mixture to the dish, spreading it out evenly. Add half of the zucchini slices on top of the lentil mixture. Repeat this process, adding another layer of bread, lentil mixture, and zucchini slices. Top with the grana padano cheese.
6.Bake for about 35-40 minutes, or until the cheese is golden brown. Let cool for a few minutes before slicing and serving.
