2 zucchinis
1/2 onion, grated
1/4 cup all-purpose flour
1/4 cup grated Parmesan cheese
1/4 cup bread crumbs
1 egg, beaten
1/4 tsp salt
1/4 tsp black pepper
3 tbsp olive oil

Instructions

1.Grate the zucchini into a clean dish towel.
2.Squeeze all of the excess water from the zucchini.
3.In a mixing bowl, mix together the zucchini, onion, flour, Parmesan, bread crumbs, egg, salt, and pepper.
4.Heat the olive oil in a large skillet over medium heat.
5.Scoop 1/4 cup of the mixture into the skillet.
6.Flatten the mixture with a spatula and cook for 3 minutes on each side.
7.Serve with sour cream or tzatziki sauce.
