2 zucchinis | |
1/2 onion, grated | |
1/4 cup all-purpose flour | |
1/4 cup grated Parmesan cheese | |
1/4 cup bread crumbs | |
1 egg, beaten | |
1/4 tsp salt | |
1/4 tsp black pepper | |
3 tbsp olive oil |
1. | Grate the zucchini into a clean dish towel. |
2. | Squeeze all of the excess water from the zucchini. |
3. | In a mixing bowl, mix together the zucchini, onion, flour, Parmesan, bread crumbs, egg, salt, and pepper. |
4. | Heat the olive oil in a large skillet over medium heat. |
5. | Scoop 1/4 cup of the mixture into the skillet. |
6. | Flatten the mixture with a spatula and cook for 3 minutes on each side. |
7. | Serve with sour cream or tzatziki sauce. |
