2 lbs tomatoes

1 1/2 teaspoons Worcestershire sauce
1 teaspoon grated lemon , rind of
2 tablespoons fresh lemon juice
pita bread , cut into wedges , toasted

Instructions

1.Blanch the tomatoes in boiling water for a few seconds, then peel and chop them finely.
2.Heat the olive oil in a large skillet over medium heat, and sauté the chopped onion and bell pepper for a few minutes, stirring frequently.
3.Add the minced garlic and cook for another minute.
4.Add the shredded zucchini to the skillet and continue to cook, stirring occasionally, for 5-7 minutes, or until the zucchini is tender.
5.Add the chopped tomatoes, parsley, basil, oregano, Worcestershire sauce, lemon rind and juice to the skillet. Stir well and reduce the heat to low.
6.Simmer the mixture for 10-15 minutes, or until the tomatoes have broken down and the flavors have developed.
7.Remove from heat and let cool.
8.Serve with toasted pita bread wedges.
