Ingredients

1 potato
3 zucchini , shredded
1 egg , beaten

Instructions

3.In a large bowl, combine the shredded zucchini, mashed potato, egg, sweet onion, mint leaves, feta cheese, bread crumbs, and flour. Season with salt and black pepper as desired. Mix well until a thick mixture is formed.
4.In a large, nonstick skillet, heat the olive oil over medium-high heat. Working in batches, drop the zucchini mixture by spoonfuls into the hot oil. Flatten each mound with the back of a fork or spoon, and cook until golden brown and crispy, about 2 to 3 minutes per side. Transfer fritters to a paper towel-lined plate to drain excess oil.
