250 g dark chocolate
125 g unsalted butter , softened
200 g ground almonds
4 eggs , separated
200 g muscovado sugar
50 g unsalted butter
100 g dark chocolate

Instructions

1.Preheat the oven to 180°C/gas mark 4.
2.Line a 23cm cake tin with parchment paper.
3.In a heatproof bowl, melt the 250g of dark chocolate with the 125g of butter.
4.In a separate bowl, whisk the egg yolks with the muscovado sugar until pale.
5.Add the melted chocolate and butter to the egg yolk mixture and stir well to combine.
6.Fold in the ground almonds.
7.In a clean bowl, whisk the egg whites until stiff peaks form.
8.Add a third of the egg whites to the chocolate mixture and fold in gently to loosen the mixture.
9.Add the remaining egg whites and fold in gently to ensure they are fully incorporated into the mixture.
10.Pour the batter into the prepared cake tin and bake for 35-40 minutes or until a skewer inserted in the centre comes out clean.
11.Allow the cake to cool in the tin for 20 minutes, then carefully turn it out onto a wire rack to cool completely.
12.To make the ganache, melt the 50g of butter and 100g of dark chocolate together in a heatproof bowl placed over a pan of simmering water.
13.Once melted, remove from the heat and allow to cool slightly.
14.Spread the ganache over the cooled cake and serve.
