1 eggplant , washed
500 g ziti pasta or 500 g penne
500 g ricotta cheese
500 g mozzarella cheese
1/3 cup parmigiano
2 cups tomatoes or 2 cups pasta sauce
3 cloves garlic , minced
salt
pepper
oregano
2 tablespoons olive oil
10 liters water

Instructions

1.Preheat oven to 375°F (190°C).
2.Cut the eggplant into small cubes. In a bowl, toss the eggplant with 2 tablespoons of olive oil, minced garlic, salt, pepper, and oregano.
3.Place the eggplant on a baking sheet and roast in the oven for 20 minutes.
4.In a pot, bring 10 liters of water to a boil. Add salt and the pasta. Cook until tender, then drain.
5.In a bowl, mix the pasta and roasted eggplant. Add tomato sauce and ricotta cheese. Combine well.
6.In a baking dish, spread some pasta mixture to cover the bottom. Layer with mozzarella cheese and add the remaining pasta mixture. Top with Parmigiano cheese.
7.Bake in the oven for 25 minutes or until cheese is golden brown and bubbly.
