Ingredients

1/2 lb lamb , thin-sliced
2 tablespoons soy sauce

4 tablespoons canola oil or 4 tablespoons peanut oil
3 -4 whole dried red chilies
2 -3 garlic cloves , thin-sliced
1/2 cup fresh cilantro , chopped

Instructions

1.In a bowl, mix together soy sauce, Shaoxing wine, cumin, crushed red pepper flakes, and salt to make a marinade.
2.Add thinly sliced lamb to the marinade and coat well.
3.Marinate the lamb for at least 30 minutes or overnight in the refrigerator.
4.In a wok or a large skillet, heat canola oil or peanut oil over high heat.
5.Add dried red chilies and stir-fry for a few seconds until fragrant.
6.Add garlic and stir-fry for about 15 seconds.
7.Add sliced onion and stir-fry for about 30 seconds.
8.Add the marinated lamb to the wok or skillet, and stir-fry for about 3-5 minutes.
9.Add chopped cilantro and stir-fry for another 1-2 minutes.
10.Serve hot with steamed rice.
