300 g almonds , finely grounded
100 g caster sugar , siefted
50 g flour
2 teaspoons cinnamon
2 egg whites ( see note on egg size )
1 egg white
1 dash salt
200 g caster sugar , siefted
milk
Zimtsterne, commonly called 'cinnamon star cookies,' originated from Switzerland, Germany, and Austria. The cookie is said to resemble a star, referring to the star of Bethlehem, and is a Christmas must-have in many households worldwide. The cookies have a crispy exterior and a chewy, nutty interior, and the cinnamon flavor will make you feel all festive and cozy. Although they may look complicated, they are easy to make, so gather your loved ones and have fun while baking this simple recipe.

Instructions

1.In a large bowl, combine the finely grounded almonds, sieved caster sugar, flour, and cinnamon.
2.Mix in two egg whites, adding one at a time, continue mixing until a smooth dough forms.
3.Sprinkle your working surface with caster sugar and roll the dough out to a thickness of 0.8 cm, cut the dough into star shapes, then place them on the baking parchment.
4.Leave the cookies to rest at room temperature for 30 minutes while preheating the oven to 140°C/284°F.
5.Whisk the egg white together with a dash of salt until stiff peaks form. Gradually add the sieved caster sugar while continuously whisking.
6.Divide into two while putting one aside and add milk to the other half, mix well to obtain a smooth glaze.
7.Brush the cookies with white beaten egg first to ensure the glaze will stick, then, using a pastry brush, apply the milk glaze on top.
8.Bake the cookies for 25-30 minutes, they should be firm but not browned. Allow them to cool before removing them from the parchment paper.

CONS

May crack on the surface while baking, especially if the dough consistency is too dry or not chilled enough.

It is tricky to get the right thickness, too thin cookies get burnt while too thick ones end up uncooked at the center.
