1 tablespoon parsley , chopped
1 can beef broth
salt , to taste
pepper , to taste

Instructions

1.Preheat oven to 350°F.
2.Cut the beef roast into 1-inch cubes and season with salt and pepper.
3.Heat butter in a Dutch oven over medium-high heat. Add in the beef and cook until browned on all sides.
4.Add in the chopped onion and garlic and sauté until the onion turns translucent.
5.Peel and cut the potatoes, carrots, and parsnips into bite-sized pieces. Then add them into the pot with the beef and onion.
6.Peel and dice the celery root and add it to the pot, along with the beef broth. Season with more salt and pepper to taste.
7.Bring the stew to a boil and then cover with a lid. Place the Dutch oven in the preheated oven and cook for 2-2.5 hours until the beef is tender and the vegetables are cooked through.
8.Stir in the sour cream, dill, and parsley. Serve hot.
