1 lb okra , trimmed
2 onions , sliced 1/4-inch thick
2 large tomatoes , skinned and sliced 1/4-inch thick
2 lemons
1 tablespoon sugar
1 tablespoon salt
1/4 cup olive oil

Instructions

1.In a large pot, bring 3 cups of water to boil. Meanwhile, cut the ends of the okra and gently wash them.
2.Once the water is boiling, add 1 tablespoon of salt to the pot. Then, add the okra and blanch them for 2-3 minutes until they turn bright green. Remove from heat and strain in a colander.
3.In a separate deep skillet, heat ¼ cup of olive oil over medium heat. Add sliced onions and fry until they begin to caramelize.
4.Next, add the sliced tomatoes, 1 tablespoon of sugar, and 1 teaspoon of salt to the skillet. Cook for a few more minutes until the tomatoes become tender.
5.Add the blanched okra to the skillet and gently stir in with the tomato mixture. Pour in a 1/2 cup of boiling water and bring to a boil.
6.Once boiling, lower the heat to low and cover the skillet. Simmer for 25-30 minutes, until the okra is cooked through and the dish has a thick, creamy consistency.
7.Serve hot with freshly squeezed lemon juice on top.
