Zeppoles are a traditional Italian dessert that are commonly served during special celebrations like St. Joseph's Day and Carnival. They are usually sold at food fairs and festivals. Zeppoles are like Italian doughnuts that are made from a rich pastry dough which is dropped into hot oil and fried until crispy. They are typically dusted with powdered sugar, making them the perfect sweet treat to enjoy with your friends and family. Zeppoles can be enjoyed year-round and are a great way to bring a little bit of Italy into your home.

Instructions

1.Cut the vanilla bean lengthwise and scrape out the seeds. In a small bowl, combine the vanilla seeds with 3 tablespoons of sugar and the ground cinnamon.
2.In a medium saucepan, heat the butter, salt, water, and remaining 1/2 cup of sugar until the butter has melted and the mixture comes to a boil. Remove the pan from the heat and add the flour all at once, stirring vigorously until the mixture comes together into a ball.
3.Add the eggs to the mixture one at a time, mixing well to combine each one before adding the next. The dough should become stiff and shiny.
4.In a large, deep pot, heat the olive oil over medium-high heat. Using a tablespoon, drop the dough into the hot oil and fry until the zeppoles are golden brown on all sides. Drain on paper towels and immediately toss in the cinnamon and sugar mixture.
5.Serve the hot fried zeppoles with powdered sugar, honey, or your favorite dipping sauce.
