Ingredients

3 medium potatoes , cut into bite sizes
600 g chicken breasts , cut into strips
salt & pepper , for marinate the chicken
1 small onion , cut finely
3 tablespoons curry powder ( or more if you like more spicy ! )
salt and pepper , for taste
400 ml coconut milk
5 tablespoons oil , for fry

Instructions

1.Marinate the chicken with salt and pepper in a bowl for 15-20 minutes.
2.In a wok, heat up 1 tablespoon of oil over medium heat. Add the chicken and cook until they are no longer pink. Remove from wok.
3.Add remaining oil to the wok. Add the onions and saute for 1-2 minutes.
4.Add the curry powder and stir until fragrant.
5.Add the potatoes and stir until they are coated with curry powder.
6.Add the coconut milk, stir and bring it to a boil.
7.Reduce heat to low and simmer until the potatoes are cooked through.
8.Add back cooked chicken strips.
9.Stir to mix well.
10.Add salt and pepper to taste.
11.Cook until heated throughout.
